Buffalo Chicken Dip

I found a recipe the other day that I decided to try out. I loved it so much that I had to share it here! So if you like buffalo chicken, you have got to try this dip. You can adjust the spiciness to your liking. I will probably add a little more heat next time I make it!

For this recipe, you will need 8 oz cream cheese (softened), 1/2 cup shredded cheese, shredded chicken, 1/2 cup hot sauce, 1/2 cup ranch and pepper to taste.  I chose sharp cheddar and pepper jack for the shredded cheese, but you can use whatever cheese you like.  The recipe called for 1/2 cup of shredded cheese, but since I used two kinds of cheese, I did 1/2 a cup of each (and I may have gone a little over, but I like cheese).  Season with black pepper to taste.

Preheat the oven to 350 degrees.  Cut the cream cheese into cubes and mix all the ingredients together.  I used my skillet, but you could also use an oven safe casserole dish.  Once all the ingredients are mixed together well, bake for 20 minutes or until hot and bubbly.

This has become one of my favorite dip recipes, though I will be experimenting with how to make it vegetarian in the future.  I will update with substitutions when I do.  If you try this recipe out, let me know what you think!

Ingredients

2 cups chicken shredded cooked
8 oz cream cheese 1 package, softened
1/2 cup shredded sharp cheddar
1/2 cup shredded pepper jack
1/2 cup hot sauce
1/2 cup ranch dressing
Black pepper to taste
Celery, chips, or bread for dipping

  1. Preheat oven to 350°F.
  2. In a large bowl, combine chicken, cream cheese, blue cheese (or shredded cheddar), hot sauce and ranch dressing. Mix well and season to taste with black pepper.
  3. Transfer dip to 1-quart oven-safe dish and bake for 20 minutes or until dip is hot and bubbly.
  4. Serve with vegetables and chips for dipping.
