Potato Asparagus Bake
The other day, I decided to try something new. A while back I saw a picture that someone posted on potatoes and asparagus mixed together. It looked so good, that I decided I’d try something similar. It turned out so good. Here is what I did.
While at the grocery, I got a bag of petite red potatoes, a bunch of asparagus and grated Parmesan and Romano cheese. Once home, I had the kids help me cut up the potatoes (into quarters) and asparagus.
While they were doing that I preheated the oven to 350 degrees. I put a stick of butter in a baking pan and melted it in the oven while it was preheating. Once the butter was melted, I took the pan out and added the potatoes, and mixed them in the butter. After that I added the asparagus and mixed it all together, so that the butter was coating everything.
Then I sprinkled the Parmesan (approx 1/2 cup) over the top and mixed it in. I then sprinkled a little more over the top again, covered it and baked it for 1 hour at 350.
When I took it out of the oven, the potatoes were perfectly cooked and it was really good. The kids of course didn’t eat the asparagus, but loved the potatoes, which are similar to a Parmesan Potato recipe I fix. I pared it with a flank steak (also baked at 350 for 1 hour) and it was a perfect meal.
Ingredients:
1 bag petite red potatoes
1 bunch of asparagus
1 cup grated Parmesan and Romano cheese
1 Stick butter
Preheat oven to 350 degrees. Put butter into a medium size baking dish and melt while oven is preheating. Cut potatoes into 4ths and asparagus into bite size pieces. Once butter has melted add potatoes and asparagus, mix all together, so butter coats all. Add 1/2 cup Parmesan and Romano cheese and stir into mixture. Top with remaining Parmesan cheese. Cover and bake at 350 for 1 hour.
I make a very similar potato recipe with just potatoes alone. I’m very tempted to try adding the asparagus to it as well. My husband isn’t a fan of asparagus, but this might convince him to give it another try!
I based this off a Parmesan potato recipe I have, just added the asparagus to it. It turned out well.
I do this too but use olive oil instead of butter and add Alpine Touch seasoning salt.
I wouldn’t think the Parmesan cheese would stick to the potatoes right using olive oil. I might be wrong, and I do have some things that I prefer olive oil over butter, but for this type of recipe, I don’t think olive oil would have the same effect.
I used my Parmesan potato recipe for the basis of this. The only difference really is adding the asparagus to it. I may try it sometime soon and see what kind of difference it makes though and do a comparison of the two.

It was very good. The kids picked out the asparagus but all loved the potatoes! And it went really good with the steak that I baked too.
