White Bean Potato Soup

I love potato soup and I love bean soup. My husband likes white beans in particular, so the other day I had the idea of making a white bean potato soup. I had to think about how to do this, because I didn’t have a recipe to follow and didn’t want it to be a lot of extra work when we still have sick kids in the house. So, I got a lot of already prepared frozen stuff last time I was at the grocery and put it in the freezer to have on day for a day when I didn’t have a lot of extra time, which was today! So, I pulled everything out and starting thinking about how I should do this, what spices I should add and started throwing things together.

I started with 2 tablespoons of olive oil in a skillet. Then I added some frozen onions and a meal starter with onions, green bell peppers and celery to the olive oil and cooked it till everything was soft (about 15 minutes on medium heat). While that was cooking, I put a chicken broth base into my soup pot. To make this vegetarian, you could use veggie broth. I chose chicken broth, because I’m hoping that it will help knock out the sickness running through our house. I added 2 tins each of pinto, cannellini and great northern beans to the broth, then added some diced hash brown potatoes to the pot.

Once the onion mixture was soft, I added it to the broth and beans.  For spices, I decided to use garlic, oregano, black pepper and cayenne pepper.  You can add whatever spices you like though.  I also ended up adding a little hot sauce to it before I was done.  As I was stirring it, I finally decided to add corn to the pot as well.  I let it cook for 20 minutes then took my potato masher and mashed about half of the mixture in the pot (you could also use a blender for this, but I wasn’t wanting to pull it out and then I’d have to clean it up afterwards) to make the soup a little thicker.

White Bean Potato Soup

Ingredients

2 T Olive oil
1 onion-chopped
1 frozen bag of chopped green bell pepper and celery or
1/2 green bell pepper-chopped and
2 celery stalks – chopped
Chicken or vegetable broth
2 cans Cannellini beans
2 cans Pinto beans
2 cans Great Northern beans
1 bag frozen corn (optional)
Diced potatoes
1 T Oregano
1 T Garlic
1 T Black Pepper
1/2 t Cayenne Pepper
Hot Sauce (optional)

In a skillet put the olive oil, onions, bell pepper and celery on med heat. Cook until soft, about 15 minutes.  In a soup pot, combine the broth, beans and potatoes.  Add the softened onion mix.  Add spices to desired taste.  Cook for 30 minutes, then mash appx half of the soup.  Enjoy.

      I love to cook, it’s the clean up that I don’t like, so I frequently try coming up with easy to prepare meals using as few pots as possible. I could have cooked the onion mix in the soup pot before adding the other stuff, but was in a hurry the day I made this. With 4 kids, there is always something going on and easy meals are a necessity for that reason as well. I hope you enjoy it as much as we did. Let me know when you try it!
